Pineapple Rice
1 cup brown rice
3/4 cup pineapple juice
11/4 cup water
1/2 cup almonds, whole, raw
1/2 teaspoon sesame oil
1 cup pineapple chunks
1 teaspoon soy sauce
pinch cayenne pepper
Sea salt to taste (optional)

Cook the rice in the water and pineapple juice. Bring to a boil, and then turn the temperature down to low and let it sit covered for 1 hour.
When the rice is finished add the almonds, sesame oil, pineapple, soy sauce and cayenne pepper. Stir and cook on medium low for 10 minutes, just to let the flavors combine.
