Bit O' Sunshine Pie
3 cups Dole Pineapple Orange Juice
¼ cup Fresh Lemon Juice
½ cups Organic Agave Nectar
2 Tablespoons evaporated cane organic sugar
7 Tablespoons Cornstarch
¼ teaspoon sea salt
8-inch Wholesome or Arrowhead Graham Cracker Crust
In a blender, combine all juices, sweeteners, cornstarch and salt. Process on low speed until well mixed and cornstarch is dissolved. Pour into a saucepan and coop on medium-high heat, stirring constantly until thick. Pour into an 8-inch “ready to use” graham cracker crust. Chill until cold and set in the middle. Top with Whipping Cream recipe belowand lightly toasted pecans, finely chopped.
Yield 1 (8-inch) pie.
