Vegan Nog

2 12 oz pkgs extra firm, silken tofu
2 cups plain soymilk
2/3 cups Wholesome cane sugar granulated
¼ tsp sea salt
1 cup cold wáter
1 cup Apple juice
4 ½ tsp pure vanilla extract
20 ice cubes
Freshly grated nutmeg
 
Blend tofu, soymilk, sugar and salt until very smooth,. Pu tinto bowl and whisk with wáter, vanilla and Apple juce. Refrigerate until serving time, then blend ½ fo the mixture with 10 ice cubes until foamy. Repeat with the other half. Serve in glasses with nutmeg sprinkled on top.
