No Bake Tofu Cheesecake
1 cup graham cracker crumbs
4 tablespoons pecan meal
1 tablespoon Whole Wheat pastry flour
1 tablespoon Florida Crystals Milled Cane Sugar
1/2 cup soy margarine
Combine all ingredients in a mixing bowl and press into an 8-9 inch springform pan. Set aside.
1 1/4 cups Dole frozen pineapple-orange juice concentrate.
3 tablespoons Agar Agar flakes
1/2 cup raw cashews
1/3 cup honey
2-12 oz. packages firm Mori-Nu Tofu
1/2 teaspoon salt
1/2 teaspoon lemon juice
1 cup coconut milk
Puts Dole Juice in saucepan with Jel and heat till the Jel dissolves.
Put into blender and add cashews. Blend until satiny smooth. Add remainder of ingredients and blend until smooth. Pour into springform pan. Refrigerate at least two hours. Serve with berries or sauce.
